The Milky Way...

From milk to cheese to yummy ice-cream, the dairy technologist plays a vital role in all milk products. Even within dairy technology, there are various areas in which s/he can specialise.

Your work depends on your field of specialisation. The production and processing of milk and milk products takes place in many stages. For example, milk undergoes the process of pasteurisation and standardisation before it is packaged for sale. If it is being converted into condensed milk or milk powder, then milk needs to be put through the process of condensing and drying. Other dairy-based products such as butter, cheese, yoghurt and ice creams are put through different chemical and bacteriological processes. For their work, dairy technologists need to have a good knowledge of the principles of bacteriology, chemistry, physics, engineering and economics. Developing various methods of preserving milk is in itself an area of specialisation. For example, there are various milk powders, some that dissolve instantly, some that dissolve at room temperature and so on.
